Friday Food : Gingerbread Pancakes with White Chocolate Drizzle

As the holidays approach I think we’re all looking for new twists and takes on old favorites, along with traditional staples. I came across a few ideas for variations of these cakes and decided to try my hand at it too. Not to mention every weekend I have pancakes on the brain.

Gingerbread Pancakes with White Chocolate Drizzle

What you will need:

Pancakes:

  • 1 cup flour
  • 1/4 cup yellow cornmeal
  • 2 tablespoons sugar
  • 1/2 teaspoon cinnamon
  • 1 teaspoon ginger
  • 1/8 teaspoon allspice
  • 1/8 teaspoon ground cloves
  • dash of salt and nutmeg
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 cup dark molasses
  • 1 cup buttermilk
  • 1 egg

Drizzle:

  • 1 cup white chocolate chips
  • 2 tablespoons oil

Directions:

Pancakes:

  1. Combine all dry ingredients in a large bowl and mix well
  2. Combine all wet ingredients in a separate bowl and mix well
  3. Pour wet ingredients into dry ingredient and stir until blended
  4. Prepare skill/pan over low to medium heat
  5. Using a measuring cup, dispense equal amounts of batter onto a heated skillet
  6. Allow pancake to cook until bubbles come through on the surface
  7. Flip and wait 2-3 minutes before removing from the skillet
  8. Repeat flipping process for a deeper color
  9. Serve warm

Drizzle:

  1. Combine white chocolate chips and oil in a microwave safe container and heat on 30 second cycles (min took 90 seconds total)
  2. Stir between each cycle until well blended
  3. Pour over pancakes

Makes 9-12 pancakes

Comments:

Some of you may be wondering how I’m using white chocolate…well it is because I found a WONDERFUL new brand of chocolate chips, where they are super allergy friendly. Chatfield’s! The white chocolate isn’t made with palm oil (yippie) and in fact their entire line is made in a factory which is free of nuts! Yippie for some of you too!

The pancakes are not overwhelmingly gingerbready, at least not IMHO. I made these for my family. If I were to make them for myself I’d go heavier on the spices.
