20 Minute Quinoa Dishes

I couldn’t decide which of these dishes to share with you first, then I had the brilliant idea of sharing them together! See, while day dreaming I came up with some fun things to do with the quinoa in my house. As we’ve discussed before I have switched from rice to quinoa and it’s my latest love. Paired with veggies I have found a source for protein and carbs without all the animal meat. Not that I am against eating animals at all, but my cholesterol is high, meaning I need to cut back. The skin on the potato will give you fiber, or enjoy with toast/bread/roll, just make sure it’s WHOLE WHEAT, not enriched anything and at least 3g of fiber per serving.

Broccoli & Cheese Potato with Quinoa

What you will need

  • 1-2 baking potatoes
  • 1 cup chopped broccoli
  • 1/2 cup quinoa
  • cheese


Directions

  1. Prepare quinoa.
  2. Place 1/2 cup dry quinoa and 1 cup water in a sauce pan and bring to a boil.
  3. Reduce heat to simmer, cover and allow to cook for 10-15 minutes.
  4. Quinoa is ready when all water has been absorbed.
  5. Meanwhile boil or microwave potato.
  6. Place potato on a plate or in a bowl.
  7. Serve covered with quinoa, broccoli and cheese.

makes 2-3 servings

Quinoa Risotto with Vegetables

What you will need

  • 1 cup quinoa
  • 2 cups vegetable broth/stock
  • 2 cups mixed fresh or frozen vegetables. (I used peas, carrots,  green beans and corn)
  • 4-5 small red potatoes


Directions

  1. Prepare quinoa.
  2. Place 1 cup dry quinoa and 2 cups stock/broth in a sauce pan and bring to a boil.
  3. Reduce heat to simmer, cover and allow to cook for 10-15 minutes.
  4. Quinoa is ready when all water has been absorbed.
  5. Meanwhile boil or microwave potatoes.
  6. When quinoa is finished, add fresh veggies and mix well. Add additional broth/stock if needed.
  7. Serve with potatoes on the side, or dice potatoes and combine

makes 3-4 servings

Comments

If you find the potato too dry, try adding sour cream, or better yet plain greek yogurt.

Want something more sweet? Switch out the baking potato with a sweet potato!

To keep things super simple, use frozen veggies instead of fresh. Remember though, to buy the bags/boxes/whatever without all the added butters and preservatives!

Am I the only person who thought risotto was a type of grain, not just a preparation style? Yes? Maybe I should have kept that on the DL.

  1. They both look like meals my family would eat. LOVE one pot dishes especially with Quinoa because it makes it a complete meal. My kids love broccoli and cheese and adding the the quinoa is brillant.
